Valentine's Day is coming up, and there's absolutely no need to forgo your keto diet! You can enjoy a romantic night out with your boo and treat yourself to a special dessert! I mean, what would Valentine's Day be without chocolate?!
Even though I am against Valentine's day hype, consumerism, and processed sugar that comes with it, I am all for romance and chocolate! Especially when it's made with only four ingredients. I used cocoa butter to achieve decadent texture, cream, and cocoa to balance the taste and stevia powder to make it sweet.
Use a silicone mold to make them - heartshaped or round, and experiment with different shapes and sizes. You can wrap them up in paper and place them in a decorative box and voila - you have a perfect Valentine's gift.
In a saucepan, bring the cream to a boil. Once it starts boiling, reduce the heat, and let it gently simmer.
Stir regularly and cook until you get a thick, velvety consistency.
In another pan melt the cocoa butter. Add the cocoa powder and Stevia powder. Mix well. Stir in the heavy cream.
Pour the mixture into chocolate molds and refrigerate for 30 minutes or until set.
Serve and enjoy! Happy Valentine's Day 💖
